This sweet and healthy quinoa dish pairs perfectly with summer BBQ. Or make it a filling lunch by adding chopped cooked chicken breast.
Combine cooled quinoa, chickpeas, celery, green onion, cherries and almonds in a large bowl.
In a small bowl, whisk together vinegar, oil, honey and vanilla extract. Pour over the other ingredients and toss. Refrigerate until ready to eat.
