A colorful and delicious summertime salad served with a quick an easy-to-make blue cheese dressing.
For the salad:
Add the mixed greens to a platter or 2 individual serving plates. Next, top with the carrots, shelled edamame, and cucumbers. Then roll the slices of ham together in one big roll and slice the ham width-wise in thin strips. Then add the ham, dried cranberries, crumbled blue cheese and blackberries on top of the salad. Set aside for a moment.
For the blue cheese dressing:
In a small bowl add the mayonnaise, milk, lemon juice, salt, pepper, onion powder and blue cheese. Mix together. Just before serving drizzle the blue cheese dressing on the salad.
