Description

Delicious Artichoke Hearts and Orzo Salad for picnics, the cottage, the beach.

Ingredients

  • 2 Tablespoons Rice Vinegar
  • 1 teaspoon Basilic Mustard
  • ¼ cups Olive Oil
  • 1 teaspoon Maple Syrup
  • 1-½ cup Cooked Orzo
  • 1 clove Garlic
  • ¼ cups Red Onion
  • ½ cups Cucumbers
  • 1 cup, 10 tablespoons, 2-⅔ teaspoons, 1-⅓ pinches Artichoke Hearts, Drained And Quartered
  • 10 whole Grape Tomatoes, Quartered
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • ⅓ cups Feta

Preparation

In a salad bowl, whisk together the vinegar, mustard, olive oil and maple syrup. Add the remaining ingredients. Season with salt and pepper. Marinate at least 2 hours.

It is made in Quebec. You can use Dijon instead of Basilic Mustard.

This turned out good. I substituted the maple syrup for honey, maple syrup sounded kind of strange to me. Otherwise a great pasta salad! Thanks for sharing!
