Description

My mom makes this and it is my absolute favorite! The dressing is to die for, and I make it often and use it on various types of salad. It is the perfect mix of sweet and salty. Just what I want on my Chinese chicken salad! Enjoy!

Ingredients

  • 1 whole Cucumber, Diced
  • 3 whole Green Onions, Chopped
  • 1 whole Package Of Chicken Flavor Ramen Noodles, 3 Ounce Package, Noodles And Seasoning Packet Divided Use
  • 2 teaspoons Sesame Seeds
  • 3 whole Cooked And Shredded Boneless, Skinless Chicken Breasts
  • 1 whole Head Of Iceberg Lettuce, Chopped
  • ½ cups Canola Oil
  • ½ cups Water
  • ¾ cups Red Wine Vinegar
  • 6 Tablespoons White Sugar
  • 2 Tablespoons Low Sodium Soy Sauce
  • 3 cloves Garlic, Chopped
  • 1 pinch Dry Mustard
  • 2 pinches Ground Ginger
  • 1 Tablespoon Sesame Seeds

Preparation

Combine the salad ingredients in a large bowl (cucumber, green onion, crumbled ramen noodles, 2 teaspoons sesame seeds, chicken and lettuce. Stir until ingredients are combined.

The remaining ingredients (including the packet of seasoning from the ramen noodles) are for dressing. Combine these ingredients in a canning jar or container. Put the lid on and shake or stir to combine. Serve salad with dressing on the side.

The salad stores well, as long as you keep the dressing on the side. If you know that you will be eating the entire salad, go ahead and pour the entire jar of dressing on the salad and mix to combine.
