Description

This is my grandma’s recipe for macaroni and cheese. It’s the perfect lightened up comfort food!

Ingredients

  • 2 cups Uncooked Macaroni Noodles
  • ¼ cups Butter
  • ¼ cups Flour
  • 2 cups Skim Milk
  • ½ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 2 cups Shredded Sharp Cheddar Cheese, Divided

Preparation

Preheat oven to 375ºF.

Bring a large pot of salted water to a boil. Add in the macaroni noodles and cook until al dente. Drain the noodles in a colander.

Using the same pot, add in the butter and melt over medium high heat. Add in the flour and stir until all of the flour is absorbed, approximately 2 minutes. Slowly pour in the milk, stirring constantly as you do. Add in the salt and pepper. Continue to stir the sauce until it has thickened and there are no lumps.

Once the sauce has thickened, add in 1 3/4 cups of the shredded cheddar cheese. Stir the sauce until all of the cheese has melted.

Pour the pasta back into the pot and fold in with the sauce. Pour the macaroni and cheese into a grease baking dish and top with the remaining 1/4 cup of cheese.

Bake at 375ºF for 15 minutes or until bubbly and browned. To get an extra crisp top on the macaroni and cheese, broil for the last few minutes.
