Description

Florida is known for great fish, seafood and oranges amongst other things. Enjoy this light fish sandwich.

Ingredients

  • FOR THE SANDWICHES:
  • 1 whole Large Egg, Beaten
  • 2 Tablespoons Whole Milk (to Add To Egg Wash)
  • 2 whole (8 Oz. Size) Atlantic Saltwater Cod Fish Fillets (I Have My Seafood Market Wrap These, 2'' Thick)
  • ½ cups Plain Bread Crumbs (or Panko)
  • ¼ teaspoons Smoked Paprika
  • ½ teaspoons Black Pepper
  • 2 Tablespoons Canola Oil
  • ¼ cups Vegetable Stock Low Sodium
  • 2 whole Rolls/Buns Of Your Choice
  • FOR THE SAUCE:
  • 3 Tablespoons Mayonnaise
  • 1 teaspoon Sweet Pickle Relish
  • 1 whole Lime For Zest Only (Save Fruit In Zip Lock Bag For Another Use)

Preparation

Preheat oven to 350 F.

In a small bowl add egg and milk and whisk together. Add the fish fillets and flip to coat both sides with the egg wash. On a plate place breadcrumbs or panko. Coat both sides of fish with bread crumbs or panko. Set on a clean work surface.

In a small bowl add smoked paprika and black pepper and mix together with your (clean) fingers.

In an 8×8 baking dish add oil to the bottom. Carefully place the two coated cod fillets inside baking dish. Sprinkle them with the smoked paprika and black pepper. Add vegetable stock. Place in oven and bake for 10 minutes (no need to flip the cod during baking time, it will brown up nicely).

While fish is baking you can make the homemade tarter and lime sauce. In a small bowl add mayonnaise and sweet pickle relish and stir together. Add lime zest and stir. Cover with plastic wrap and refrigerate until ready to serve.

Remove baking dish from the oven, place a piece of baked cod on the bottom of each roll/bun. Place on plates. Spread lime tarter sauce on the top bun and add it to your sandwich. You may also add any condiments you like. Fresh lettuce, tomato, etc. We like ours plain (just the lime tarter sauce). Get creative—you might like avocado slices, arugula, onion, cheese or something else, if desired.
