Description

A South of the Border twist to Southern Fried Chicken.

Ingredients

  • FOR THE CHICKEN:
  • 1 envelope (about 1 Oz. Packet) Taco Seasoning
  • ¼ cups Flour
  • 4 whole Boneless Chicken Pieces
  • ⅓ cups Butter, Melted
  • ½ cups Tortilla Chips, Finely Crushed
  • _____
  • FOR THE CHEESE SAUCE:
  • 1 Tablespoon Butter
  • 2 Tablespoons White Onion, Diced
  • ¼ teaspoons Salt
  • 3 Tablespoons Flour
  • 12 ounces, fluid Evaporated Milk
  • ½ teaspoons Tabasco Sauce
  • 1 cup Monterey Jack Cheese, Shredded

Preparation

To prepare the chicken:

1. Mix flour and taco seasoning in a bowl. Dredge chicken in the flour mix, coat well.
2. Melt butter in a second bowl, and dip flour-coated chicken in the butter.
3. Crush chips and place them in a third bowl. Dredge butter-coated chicken through the chips. Cover completely.
4. Placed chicken on a pan. Bake in a 375-degree oven for 50 minutes.

To prepare the cheese sauce (do not begin sauce until chicken is almost finished):

5. Saute onions in butter until soft.
6. Add flour, and salt, and blend well.
7. Add evaporated milk and Tabasco sauce. Stir until sauce thickens and begins to bubble.
8. Add shredded cheese and lemon juice.
9. Pour over the chicken and serve.

Loved this recipe! It tasted like a taco. I am only giving it a four because I think the chicken doesn’t need the cheese sauce. It is fine without it. Stick some salso on it instead.

I wanted to mention that i used skim milk in the sauce instead of evaporated and pepper jack cheese instead of monterey jack and tabasco, the sauce is so good!

I was excited to try this recipe because it sounded like something I would love. I did enjoy the taco flavor on the chicken and it was easy to prepare. I was disappointed that the tortilla chip crumbs got so hard while baking that they were unpleasant to eat. I also did not like the cheese sauce. I think the Tobasco ruined the cheesy flavor. When I reheated the leftovers, I left off the sauce and melted some cheddar jack on top and that tasted much better than the sauce. I will probably try this again with a couple changes – I will run the tortilla chips through the food processor, and I will leave the Tobasco out of the cheese sauce or just use cheddar jack.

Oh, so good!! I didn’t have the cheese on hand, so served it last night with salsa – very good. Can’t wait to get the cheese on my way home and have it tonight!!
