Description

This is a take on a hot Thai dish. If you want it to be hot, add cayenne pepper and hot sauce. I was fixing this for a toddler.

Ingredients

  • 1-½ pound Boneless, Skinless Chicken Thighs
  • 1 cup Salsa (hot If You Want Heat)
  • ¼ cups Peanut Butter
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons Soy Sauce
  • 4 whole Servings Of Cooked Rice, To Serve

Preparation

Place chicken in bottom of greased crock pot. Mix remaining ingredients together (everything except rice), in a small dish. Pour over chicken. Cover and cook on low for 6-7 hours. Serve over a bed of rice.

was pretty good and very easy! i’m a lover of peanut sauces and chicken, definately needed some salt and would have preferred a little kick but didn’t add any b/c of my kids :)

VERY good! And super easy! My husband was a bit skeptical about a sauce that combines salsa & peanut butter, but he & the kids loved it! A keeper!
