A quick, nutritious, well-balanced meal!
1. Preheat oven to 375ºF.
2. Cook rice according to package directions.
3. Prepare grilled chicken breast according to your preference.
4. Mix cream cheese and egg in a large bowl until well blended. Then stir in rice, corn, and 3/4 cup of the cheese.
5. Pour into a greased casserole and sprinkle with remaining cheese. (Sprinkle coarse pepper on top if you would like.)
6. Bake for 20 to 25 minutes until the cheese is melted.
7. Enjoy!
