This delectable Christmas Salad brings spring greens together with sliced almonds, feta cheese, mandarin oranges and pomegranate arils all drizzled with a tangy Honey Mustard Champagne Vinaigrette.
For the dressing, in a small bowl, whisk minced garlic, champagne vinegar, Dijon mustard, honey, salt and pepper. Slowly drizzle in olive oil, whisking continuously.
In a large bowl, add spring greens, sliced almonds, feta cheese, mandarin oranges and pomegranate arils. Drizzle dressing over salad and toss to coat.
