Mother’s Day Breakfast in Bed!

Posted by in Holidays

Tasty Kitchen Blog: Mother's Day Breakfast in Bed!

We’re getting ready to blow the lid off Mother’s Day here, friends. What, you might be asking, does every mom want more than anything in the world? The answer is simple and may inform your morning activities on Mother’s Day. Are you ready for it? Every mom’s dream is to NOT get out of bed in the morning. There you have it!

Now, we are under no illusion that it’s actually possible to sleep late. Most moms have been waking up in the wee hours far too long to stay asleep past about 7:30 a.m. Sleeping is not the point, though! The big treat is to stay in bed, reading, petting the dog, wallowing or just staring off into space. Doing nothing! It’s every mother’s dream.

So, now that we are armed with this information, let’s make a plan! Breakfast in bed sounds like a good one. We’ve got a few ideas for relatively simple breakfasts for mom that even the kids can pitch in and help to make.

Baked eggs are impressive but relatively simple. This dish is hearty and satisfying but makes for a pretty presentation for Mom. And the kids could help assemble the ingredients among the ramekins before baking.

Avocado toast is everywhere these days, and this one is easy but so delicious. Any mom will dig it!

Kids get excited to help make these fun eggs baked in muffin tins. Moms (and any other humans) get excited about eating them! Another method for cooking eggs that kids love is cracking them into cookie cutters for fun shapes.

If the mom in your life is a smoothie lover, treat her to this rich, but healthy chocolate and peanut butter version. Yum!

If the kids want to help in other ways, we love having them squeeze fresh juice or spell “MOM” with food. Bacon strips or sausage links and biscuits work well for this. And of course, delivering the breakfast tray to mom in bed is a very important job!

Enjoy Mother’s Day! And if you’re a mom, we vote you stay in bed a little while. It’s the right thing to do!

Tasty Kitchen Blog: Looks Delicious! Ratatouille Sandwiches

It’s Meatless Monday! More than that, it’s also the day most folks are recovering from a particularly lavish brunch—the day after a special weekend splurge where you’ve given yourself permission to go ahead and have that second dessert or third glass of mimosa.

Here’s a sandwich that’s perfect for keeping things light today. Sure, you can always churn out a smoothie or a nice green salad, and that would be fine too. But why not continue spoiling yourself with these Ratatouille Sandwiches instead? The only prep needed is a bit of slicing, then the oven does the rest of the work for you. Make this for lunch today! (Just click on the photo to get the printable recipe.) For an extra special touch, grab some really good crusty bread and melt some Brie on top before piling on the veggies.

Have a great Monday, friends! Hope you make yourself a nice treat today.

Let’s Talk Strawberries

Tasty Kitchen Blog: Kitchen Talk (Strawberries)

A bowl of cherries may traditionally represent the good life, but a bowl of strawberries is no less satisfying and captivating. When perfectly ripe, strawberries are succulent, juicy, sweet, with just the right counterbalance of tart that keeps you coming back for more. These bright red speckled beauties remind us that winter is over, and warmer weather lies ahead. A basket of strawberries holds a world of possibility: strawberry pies, shortcakes, ice cream, smoothies, jams, jellies, coulis, and almost any other sweet treat you can think of. But beyond that, they can also be roasted as a side dish component, tossed into salads or wraps, puréed in the salad dressing, or used in other savory applications. It’s a pretty mighty fruit, that one. Even the Beatles wanted to go down to their fields and take us with them.

Strawberries are in season right now, and a recent stop at the local stand of a nearby strawberry farm was quite the revelation. I had no idea there were so many different varieties of strawberries! They stock the stand every morning after picking—flats upon flats of lovely red strawberries. By early afternoon, you see the “All sold out” sign on the side of the road. That’s a lot of strawberries, and we want to know what you all do with them! Tell us:

What’s your favorite strawberry tip, trick, or recipe?

Any special tips for buying them or storing them? Do any of you grow strawberries in your garden? Any favorite recipes or dishes? I love strawberries but I’m pretty simple and haven’t gotten creative with them yet. Ree’s Strawberry Shortcake Cake is one of my favorites, but mostly, I just snack on them, sometimes with a bit of cream or honey yogurt, but always plain and unadorned if they’re particularly sweet. And I always keep some in the freezer for smoothies. My mom keeps them frozen too, but she uses them to keep champagne chilled. (I’m not as cool as she is, obviously.)

We want to hear all your strawberry tips and recipes, so come share below and include some links if you have ‘em!

Let’s Talk Marinades

Posted by in Kitchen Talk

Grilling is all about letting the meat shine, and usually, you don't need much more than a simple sprinkling of salt and pepper. But sometimes, you want to add a bit more flavor. That's where a marinade comes in.
