I love a good Greek salad. It is one of my favorite salads to make and to order when we dine out. When I saw Lotta Maddness’s recipe for Cucumber Feta Rolls on Tasty Kitchen, I immediately thought: Genius! Why didn’t I think of that! The rolls have all of the fabulous flavors of a Greek salad, but in a cute little cucumber roll. I knew I had to make them.

To make the rolls, you will need: an English cucumber, dill, sun-dried tomatoes, kalamata olives, Greek yogurt, feta cheese, lemon juice, and black pepper. Simple, right?

Using a mandoline (or a sharp vegetable peeler), slice the cucumber lengthwise into long thin strips.

I had so much fun making these rolls! And the best part, you get to eat them when you are finished playing! I loved the creamy Greek yogurt and feta filling. The kalamata olives, sun-dried tomatoes, dill, and lemon gave the rolls the perfect punch of flavor. The cucumber wrapped everything up nicely and provided a nice crunch. These Cucumber Feta Rolls make a great party appetizer. Not in the mood to party? Make them for yourself! I made them for lunch and served pita bread on the side. So tasty!

Description

Greek salad in a rolled up cucumber strip.

Ingredients

  • 1 whole English Cucumber
  • 2 sprigs Dill
  • 2 Tablespoons Sun Dried Tomatoes
  • 8 whole Kalamata Olives
  • 4 Tablespoons Greek Yoghurt
  • 1 ounce, weight Feta Cheese
  • 1 teaspoon Lemon Juice
  • 1 pinch Black Pepper

Preparation Instructions

Start by slicing the cucumber in half lengthwise. Then, using a mandoline (or a sharp vegetable peeler), slice the cucumber lengthwise into long thin strips. Place the cucumber strips on a kitchen towel to absorb the liquid.

Chop the dill, sun-dried tomatoes and olives into smaller pieces. Mix together the Greek yoghurt, feta and lemon juice in a bowl until blended. Next, add the dill, sun-dried tomatoes and olives to the feta mixture and season with pepper.

Place one strip of cucumber on a chopping board. Place a teaspoon of the feta mixture onto one end of the cucumber strip. Roll up the cucumber strip and secure with a toothpick. Chill until ready to serve.

Cookies are my all time favorite dessert, that is no secret. Well, my second favorite dessert is frozen yogurt. So when I saw Anna’s recipe for Chocolate Chunk Cookie Dough Frozen Yogurt my eyes almost popped out of my head. My two favorite treats combined in one recipe—a dream come true! And the best part? You don’t even need an ice cream maker to make this dreamy frozen yogurt. It is so easy to make! The hardest part is letting it chill in the freezer. I am not patient, especially when desserts are involved. But I promise this Chocolate Chunk Cookie Dough Frozen Yogurt is well worth the wait!

The frozen yogurt is rich, creamy, and oh so sweet. It tastes just like cookie dough but in frozen form. I love how simple it is to make. I am going to have to keep our freezer stocked with this frozen yogurt! It is the perfect cool-down treat for a hot summer day.

Description

Your favorite cookie dough meets frozen yogurt for a perfect treat on a hot day!

Ingredients

  • ½ cups Unsalted Butter, Softened
  • ½ cups Packed Dark Brown Sugar
  • ¼ cups Granulated Sugar
  • 2 teaspoons Vanilla Extract
  • 1 cup All-purpose Flour
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ¾ cups Mini Chocolate Chips Or Chunks
  • 1 cup Vanilla Yogurt

Preparation Instructions

In a mixing bowl of a stand mixer, beat the butter and both sugars together until light and fluffy. Add vanilla and beat until combined.

In a small mixing bowl, whisk together the flour, soda and salt. Add the chocolate chips or chunks and stir.

Add the flour and chocolate mixture to butter mixture and fold in gently. Add yogurt and stir again.

Place in a container and cover with lid. Freeze until set, preferably overnight.

Cookie dough recipe adapted from Better Homes and Gardens Bridal Edition Cookbook.

Makes about 2 cups.

I love a lot of things about summer: vacations, swimming, picnics in the park, going to the farmers market, etc. But my absolute favorite thing has to be watermelon. I love watermelon. I eat it almost every day during the summer and I never get sick of it. There is nothing better than cutting into a big, juicy, red watermelon. It is the perfect cool-down treat. 

I enjoy eating watermelon plain but when I saw Bev Weidner’s recipe for Watermelon Spritzers with Honey and Lemon, I knew I had to save some of our watermelon to make these pretty drinks.

If you are looking for an easy and refreshing summer drink, you have to try these. They are perfect for summer barbecues, pool parties, or everyday sipping. They are family-friendly, but if you want to get a little crazy, you can add a little alcohol to the mix. Adults only though!

Make these as is, or add some alcohol! Yeah, do that.

Ingredients

  • 2-½ pounds Fresh Watermelon (seedless If You Can Find It), Rind Removed And Cut Into Cubes
  • 3 whole Lemons (seedless If You Can Find It), Juiced
  • 2 Tablespoons Honey
  • 2 cups Chilled Seltzer Water (more Or Less)
  • 6 sprigs Lemon Balm Or Mint, For Garnish (optional!)

Preparation Instructions

Place the watermelon, lemon juice and honey into a food processor. Process until smooth.

Strain the mixture into a large bowl, pressing the juice out of any seeds or pulp that remains in the strainer.

Pour the juice into a large pitcher and chill until you’re ready to drink.

Coconut Oatmeal Chocolate Chip Cookies

I bake cookies at least three times a week. Yes, I have an addiction. I don’t eat all of the cookies, but of course I have to sample them. We share cookies with our friends, neighbors, and I like to stick some in the freezer for a rainy day. I have a few go-to cookie recipes that I always bake, but I really enjoy trying new recipes. When I saw Little Yellow Kitchen’s recipe for Coconut Oatmeal Chocolate Chip Cookies pop up on Tasty Kitchen, I immediately new it was going to be a cookie baking day.

The recipe is inspired by How Sweet It Is and Cooks Illustrated, so it comes with an impressive pedigree. Coconut, oatmeal, cocoa, and chocolate chips—these cookies are loaded with lots of goodies. The cookies also have coconut oil in them, one of my new obsessions. I love using it in baked goods, especially cookies.

These cookies have it all! I love the double dose of chocolate from the cocoa powder and chocolate chips. The coconut flavor isn’t too strong. It is more of a background flavor to the rest of the ingredients, which is nice. I also love the thick and hearty texture the oatmeal and shredded coconut add. I know I said I like to bake a variety of cookie recipes, but I think these Coconut Oatmeal Chocolate Chip Cookies are going to have to be a staple in my kitchen. I am already craving them. Good thing I tucked a few away in the freezer. I better go find them!

Description

These chocolatey-coconut delights are perfectly chewy and delicious. Beware, they will disappear from the cookie jar in a day, tops.

Ingredients

  • 1-¼ cup All-purpose Flour
  • ¼ cups (Rounded) Cocoa Powder, Unsweetened
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ⅛ teaspoons Salt
  • 6 Tablespoons Unsalted Butter, Room Temperature
  • 3 Tablespoons Coconut Oil
  • ½ cups Granulated Sugar
  • ½ cups Light Brown Sugar, Packed
  • 1 whole Large Egg
  • 1-½ teaspoon Pure Vanilla
  • 1 cup Shredded Coconut (unsweetened)
  • 1 cup Old Fashioned Rolled Oats
  • 1 cup Semi-Sweet Chocolate Chips

Preparation Instructions

Combine flour, cocoa powder, baking soda, baking powder, and salt; set aside.

In an electric mixer, cream together the butter, coconut oil, and sugars. Scrape down the sides and then add the egg and vanilla; mix to combine. On a low speed, gradually add the flour and cocoa mixture, until incorporated. Add the shredded coconut and oats and mix. Add chocolate chips and mix until just folded in. The dough will be pretty solid. Form into balls about the size of a heaping tablespoon and place on a lined-baking sheet (with a Silpat or parchment paper).

Bake at 350ºF for 11 minutes. Remove from oven and let cool for about 2 minutes more on the sheet, then remove and place on a cooling rack, or on an opened brown paper bag. Eat to your heart’s content. They are delicious!
