Description

A simple, pretty side dish for your next BBQ!

Ingredients

  • FOR THE SALAD:
  • 1 pound Fingerling Potatoes (mixed Colors)
  • 1 Tablespoon Olive Oil
  • ¼ teaspoons Salt
  • ¼ teaspoons Freshly Ground Pepper
  • 1 clove Garlic, Minced
  • 2 cups Green Beans
  • 2 whole Shallots
  • FOR THE DRESSING:
  • ¼ cups Olive Oil
  • 3 Tablespoons White Wine Vinegar
  • 1-½ Tablespoon Dijon Mustard
  • 1 clove Garlic, Minced
  • ¼ teaspoons Freshly Ground Pepper
  • 1 pinch Salt

Preparation

Preheat the oven to 400°F.

Cut the fingerling potatoes in half or quarters. Put the potatoes in a bowl and coat with olive oil. Mix with salt, pepper, and minced garlic. Spread the potatoes out in a single layer on a baking sheet. Roast the potatoes in the oven for 10 minutes on each side (20 minutes total).

While the potatoes are roasting, prepare the green beans. Steam the green beans in a steamer pot for about 5 minutes. Plunge the green beans in a bowl of ice water to cool them after they are done steaming. Drain the beans and cut them into thirds. Add sliced shallots and the green beans to a bowl.

Whisk together the dressing ingredients. When the potatoes are done cooking, add them to the bowl of beans and shallots, and pour the dressing over the salad. Mix well and serve the salad warm.

Really love this recipe- has been my go-to side dish. I just get one of the bags of self-steaming (microwave) green beans for even quicker time. I like my potatoes well roasted so I tend to leave them in the oven longer. Best part of this is that my SO hates shallots and onions and it’s still delicious without them.

This salad was absolutely perfect! To save time/effort, I just roasted the green beans and shallots along with the potatoes (and increased the roasting time to about 45 minutes) and it was divine. The dressing hits the spot! My husband devoured it, as did I.

This really surprised me!! It was addictively tasty, and very easy to throw together. I only added a little more salt after tossing all the ingredients together. My family says its definitely a ‘keeper recipe’.

Ummm! This was great. Loved the tang of the dijon. I did not have shallots, so a little chopped onion (raw) went into the mix. But the star of the show was the roasted fingerling potatoes. Will be making again (and again).

Saw this on your blog about a week ago, and made it then. Sooo good! I hadn’t used fingerlings before, and this was a great introduction. Love the dresssing and the beans health it up nicely. Nice work.
