Description

The best salad to hold on to that great summer feeling. Fresh, interesting and bursting with flavour.

Ingredients

  • ½ pounds, ⅞ ounces, weight Lettuce Leaves
  • 7 ounces, weight Rocket Leaves
  • 6 whole Tomatoes
  • 1 whole Cucumber
  • 1 whole Spring Onion
  • ⅜ ounces, weight Walnuts
  • 1-⅞ ounces, weight Green Asparagus
  • 1 Tablespoon Olive Oil
  • 1 dash Lemon Juice
  • Salt And Pepper, to taste
  • 4 slices Bacon

Preparation

Wash the lettuce leaves and slice them. Put them in a bowl together with the rocket leaves. Slice the tomatoes, the cucumber and spring onion and add to the bowl. Chop the walnuts and mix in with the rest of the salad.

Grill the asparagus with a little olive oil. Make sure your grill pan or frying pan is hot before you put the asparagus in. You don´t want them to suck in all of the oil. Grill them for about 5 minutes on medium heat, or until they are starting to brown.

Dress the salad with olive oil, lemon juice and salt and pepper.

Fry the bacon on medium heat until it’s crispy. I’d fry it for about 3 minutes, but this depends on how crispy you like it.

Mix the aparagus in with the salad and crumble the bacon on top. Enjoy!
