A favorite recipe from one of Utah’s favorite stops, Rumbi Island Grill! This recipe makes lots of dressing, so cut it in half if you are just making it for the average family. The salad has a bit of a spicy kick to it, but it’s so yummy! Especially with the feta on top—perfect!
Mix all of the dressing ingredients, except the ginger, in a bowl with a hand mixer for a couple minutes. Add the ginger and stir with a whisk until well blended. Top your salad with the chicken, tortillas, feta cheese, tomatoes, and the dressing.
