Easy salad recipe with raw broccoli, walnuts, dates, red onion and a creamy yogurt dressing. Great to make in large batches!
Using a potato peeler, peel the stalk of the broccoli. Remove stalk from crown and slice stalk into 1/8” rounds then chop the rounds into quarters. Chop the broccoli crown into florets and place florets along with the chopped stalk into a mixing bowl. Add the chopped walnuts, dates and red onion.
In a small bowl, combine the yogurt, honey and salt. Stir well to combine. Pour the yogurt dressing over the broccoli salad and mix well until everything is coated in yogurt dressing.
