Description

This is our all time favorite pasta salad! It marinates overnight and the final ingredients are added the day you intend to serve it. You can substitute different cheeses and add meat or olives to suit your taste.

Ingredients

  • 1 box 16 Oz. Tri-color Spiral Pasta
  • 1 whole Cucumber, Chopped
  • ½ cups Thinly Sliced Green Onion
  • ½ cups Chopped Green Pepper
  • 1 cup Zesty Italian Dressing
  • 1 cup Mayonnaise
  • ½ cups Grated Parmesan Cheese
  • 1 cup Diced Provolone Cheese
  • 2 cups Halved Cherry Tomatoes
  • 1 cup Diced Salami (optional)
  • 1 can 4oz. Ripe Olives (optional)

Preparation

Cook pasta according to package directions. Drain and rinse with cold water. Place in large bowl.

Add cucumber, green onions, and green pepper. Pour Italian dressing over pasta and stir. Cover and refrigerate overnight.

In a small bowl combine mayonnaise and parmesan cheese. Fold into the pasta mixture. Add provolone cheese and tomatoes. Add salami and olives if desired.

I am pretty much only rating this on the dressing since I put feta cheese, black olives, tomatoes and pepperoni in mine instead of what it called for. The dressing is good. It’s a nice change of pace.

This was great! I substituted chopped marinated artichoke hearts for the cucumber and added mini pepperoni. The overnight marinading process really imparts a nice flavor to the pasta and green pepper.
