Description

No cream = no guilt, right? This is so easy and so fast.

Ingredients

  • 2 cups Bread, Cubed
  • Salt, Pepper And Garlic Powder, To Taste
  • 5 Tablespoons Olive Oil, Divided
  • 3 whole Anchovy Fillets
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Worcestershire Sauce
  • 5 Tablespoons Fresh Lemon Juice
  • 1 bag (about 14 To 16 Oz. Bag) Romaine Lettuce
  • ½ cups Parmesan Cheese

Preparation

1. Preheat oven to 400ºF.
2. Place cubed bread on a cookie sheet. Drizzle with 2 tablespons olive oil and sprinkle with salt and pepper. Pop in the oven.
3. Over medium heat, drizzle the remaining 3 tablespoons olive oil. Add anchovy filets. With a fork, help to break up the anchovies. Let disintegrate into a paste.
4. Add garlic and continue to simmer for 2–3 minutes. Turn heat to low.
5. Add Worcestershire and lemon.
6. Whisk lightly to bring together. Turn off heat.
7. Remove croutons. They should be nice and golden by now.
8. In a large bowl put salad and croutons. Pour dressing over (you may need a spatula to help get all the good stuff out).
9. Toss.
10. Add Parmesan cheese and toss a bit more.
11. Serve.
