Description

This is really tasteful and a nice mix of autumn flavors. One of my favorite crunchy vegetable salads. Moni.

Ingredients

  • FOR THE SALAD:
  • 5 slices Carrots (use A Vegetable Peeler So You Have Thin Strips), More If Needed
  • ¼ heads Iceberg Lettuce, Chopped Or Torn Into Pieces,
  • 4 whole Radishes, Chopped Finely
  • ⅓ whole Long Cucumber, Peeled And Diced
  • 1 whole Shallot, Peeled And Chopped Finely
  • ⅓ cups Cranberries, Dried
  • FOR THE DRESSING:
  • ⅓ cups Sour Cream
  • 1 clove Garlic, Minced Or Pressed
  • ½ whole Lime, Juiced
  • 1 pinch Salt, Herb Salt Preferred, Or More As Desired
  • 1 pinch White Pepper, Ground

Preparation

Make several thin long slices of the carrot using a peeler. Prepare the rest of the vegetables. Toss all of the salad ingredients except the cranberries into a bowl and stir everything together.

Prepare the dressing. Just stir all the ingredients until smooth, and season with additional salt and pepper if needed.

Pour the dressing over the salad, stir to combine, and sprinkle with cranberries.
