Description

A delicious salad with quinoa, mixed veggies and avocado. This makes for a perfect light lunch

Ingredients

  • 1 cup Quinoa
  • ¼ cups Raw Corn, Cut Off The Cob
  • ¼ cups Canned Black Beans, Rinsed And Drained
  • ¼ cups Red Bell Pepper, chopped
  • ¼ cups Red Onion, Chopped
  • ½ whole Lime, Juiced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • ½ whole Avocado, Cut Into Small Pieces

Preparation

Cook the quinoa according to the package instructions.

Meanwhile combine the corn, black beans, red bell pepper and red onion in a bowl. Toss to combine.

Add the cooked quinoa into the mixture, and then add the lime juice and salt and pepper to taste.

Add the chopped avocado right before serving.

This was a great recipe. I added cilantro and some cumin which just gave it a little extra flavor. Next time I will cut down on the salt as it was a little too salty for my tastes.
