Description

A quick, easy and delicious side dish.

Ingredients

  • FOR THE SALAD:
  • 2 cups Fresh Broccoli Florets (Heaping)
  • ¼ cups Chopped Red Onion
  • ¼ cups Hormel Real Bacon Bits
  • ¼ cups Whole Cashews
  • 1 can (11 Oz. Size) Mandarin Oranges
  • FOR THE DRESSING:
  • 3 Tablespoons Mayonnaise
  • 2 Tablespoons Juice From The Can Of Mandarin Oranges (or Apple Juice, Or Milk)
  • 2 teaspoons Rice Vinegar
  • 1 Tablespoon Sugar

Preparation

For the salad:

In a large bowl, add the broccoli florets, chopped red onion, bacon bits, and cashews.

Drain the can of Mandarin oranges and reserve the juice. Set the Mandarin oranges aside.

For the dressing:

Add the mayonnaise in a small bowl.

Then, if the liquid in the can of Mandarin oranges is a fruit juice, add 2 tablespoons of the juice in the bowl with the mayonnaise. If the liquid isn’t fruit juice, add 2 tablespoons of apple juice or milk to the mayonnaise.

Next, add the rice vinegar and sugar to the bowl with the mayonnaise and mix together.

Stir the dressing into the salad.

Once the salad is coated, add the Mandarin oranges and carefully mix them into the salad making sure that they stay whole and don’t break into pieces.

Serve chilled or at room temperature.
