Description

This is a unique and delicious summer salad vinaigrette. Serve with fresh blueberries, sharp crumbled cheese and toasted walnuts. Serve at your next dinner party, your guests will flip!

Ingredients

  • FOR THE DRESSING:
  • 1-¼ cup Fresh Blueberries, Or Frozen Thawed
  • ¼ cups Balsamic Vinegar
  • ¼ cups Honey
  • 3 Tablespoons Water
  • 2 teaspoons Dijon Mustard
  • 1 teaspoon Salt
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Granulated Onion Powder
  • ¾ cups Olive Oil
  • _____
  • FOR THE SALAD:
  • 12 ounces, weight Package Mixed Greens
  • ¼ cups Bleu Or Feta Cheese Crumbles
  • ¼ cups Toasted Walnuts
  • ½ cups Fresh Plump Blueberries

Preparation

1. For the dressing, place all ingredients into a blender except the olive oil. Blend; while blender is going, slowly drizzle all of the olive oil into the blueberry mixture. Store in an airtight container in the refrigerator for up to a week. Whisk before using.

2. Assemble salad ingredients in a pretty salad bowl starting with the greens and top with crumbled cheese, nuts, and blueberries. Serve on individual serving plates for a little more elegant presentation and serve the vinaigrette on the side.

To toast walnuts, spread over a cookie sheet and bake at 275F for 12 minutes. Cool and break into dime-sized pieces.

This is so so good. Its sweet and savory. I used a couple tsp of sugar in the salad dressing b/c I didn’t have any honey in the house. Its is a new favorite. extra yummy
