This was delicious! I didn’t have the jalapenos or chiles on hand so I omitted them and it was still yummy!

WONDERFUL enchiladas! I am picky when it comes to sour cream enchiladas, and these are THE BEST. The green chiles really add great flavor. I could eat them every week…my jeans wouldn’t fit, but who cares?

Very good! I made these for my friend when and her husband after they had their first baby and she was recovering from the emergency c-section. With your mexican rice it was a great meal and they had a couple days of leftovers to live on.

I really enjoyed these (they single-handedly made me throw out my diet plan last night)! I still haven’t found a chicken enchilada recipe my husband likes, but he will just have to tough it out when I make these again

It was really good! I had grilled a whole chicken yesterday using the “soda can” method, and had seasoned it with a spicy rub so it already had great flavor when I started. I shredded it then follow your recipe. I used fresh green chili peppers (hot ones) and red peppers along with garlic and onions. The sauce was yummy too! I served it with salsa and sour cream. You definitely need to try it! I was a little worried about the kids thinking it was too spicy, but they liked it!

These were the best home made enchiladas I have ever eaten! I loved these. All three of my kids at them too.

Wow. I made 80 of these enchiladas for my husband’s football team and they were a huge hit! I had some leftover filling and leftover sauce so I mixed them together with another 2 cups of chicken broth and made soup. My husband said it was the best soup he has ever had in his life. I will definitely be making this again, doubling the batch so we can have soup, too!

Absolutely loved these ! Even my kids ate them, which says a lot ! Paired them with sweet corn cake and seasoned rice. I felt like I was eating at a restaurant!

I did a vegetarian version (mushrooms and red peppers w. vegetable broth instead of chicken) and they were pretty dang tasty. Also swapped out for fresh jalapenos to give it more of a jump. My only complaint is that there was a bit too much sauce-made reheating hard later because the tortillas absorbed so much liquid.

I made this this weekend, and my husband and I loooooove it!! I will definitely make it again. We used a bell pepper as well as jalapeno in the chicken mixture. I would recommend having your ducks (aka – ingredients) all put together and easy to reach before you start cooking so that you don’t get overwhelmed, but it’s a wonderful tasting recipe!

I made these last night. My family loved them. I had tried chicken enchiladas before, but this version is definitely much better. A new family favorite. We especially loved the sour cream sauce.

I made this last weekend and they were amazing. I decided to use flour tortillas because I’m not a huge fan of the taste of corn tortillas to be honest. SOOOO GOOD.
