Description

Healthy yet tasty turkey taco stacks.

Ingredients

  • ½ pounds Ground Turkey
  • ¼ cups Red Onion, Chopped
  • 5 dashes Chili Powder, to taste
  • 5 dashes Red Pepper Flakes, to taste
  • 5 dashes Ground Cayenne Pepper (to Taste)
  • 3 dashes Fresh Ground Pepper, to taste
  • 2 dashes Salt To Taste
  • 2 dashes Garlic Salt, to taste
  • ½ cups Bell Pepper, Any Color, Chopped
  • 1 can (15 Oz. Size) Black Beans, Drained
  • ¾ cups Jack Cheese, Shredded
  • 1 whole Avocado, Sliced
  • 1 package Tortillas (12 Ounces, About 8 Small Tortillas)
  • 3 Tablespoons Salsa (any Type)

Preparation

Using a medium skillet, brown ground turkey over medium heat until nicely browned. Typically there is not a lot of grease, but you can drain grease if you prefer. Then add chopped onions and continue to saute at low-medium heat until onions start to soften. Add all seasonings and mix into meat mixture. Add bell peppers and continue to saute until they start to soften. Add the entire can of black beans (drained) and put the meat mixture on a low temperature.

Grate cheese and slice avocado.

Heat a small skillet over medium heat and once hot, add one tortilla, then cheese, meat, avocado, cheese and place another tortilla on top. Repeat layers until the stack has 3 tortillas. Heat the tower until the cheese begins to melt, then flip and continue to heat until cheese is completely melted. Remove from pan. Top tower with more cheese, sliced avocado and salsa if desired. Enjoy!
