Description

We love Mexican food. This delicious and easy recipe and definitely a crowd pleaser, even with picky little ones!

Ingredients

  • 15 ounces, fluid Enchilada Sauce
  • 12 whole Tortillas (corn Or Flour)
  • 1 can (16 Oz. Size) Refried Beans
  • 1 pound Ground Beef, Cooked, Drained And Seasoned With Taco Seasoning
  • 2 cups Shredded Cheese

Preparation

1. Pour enchilada sauce in a pan (9×13 or 8×8) so the tortillas won’t stick.
2. Then layer 6 small tortillas (4 if you use the 8×8 pan), covering the enchilada sauce.
3. Next, layer on refried beans, taco meat, cheese then enchilada sauce. Add your extra taco ingredients here (see note below).
4. Do one more layer of tortillas, beans, meat, cheese.
5. Bake at 350ºF for 30-35 minutes, a few more if the cheese isn’t all melted.
6. Cut, serve, enjoy!

Note:
1. You can use extra taco ingredients to spice up your lasagna! Think olives, jalapenos, lettuce, onions, salsa, guacamole, sour cream, etc.
2. I used an 8×8 casserole dish because my 9×13 was dirty. Next time I’ll use the 9×13 because the smaller pan makes it thicker and more sloppy. Kind of like an enchilada! Very delicious either way!

Just made this- only thing I added was corn. It was delicious! And very easy.

Super easy and yummy too! I used hot enchilada sauce and simmered the beef with a little picante sauce, along with the beans. Stacked it up, baked it up, ate it up.

A family pleaser! It’s rare occurrence to find something that satisfies all four of our taste buds, but this did. The plates were licked clean :)

Just made this tonight, and it was a hit! My husband has a higher tolerance for Mexican food then I do, but I thought it tasted fantastic! For whatever reason I poured the entire jar of sauce in the dish all at once instead of half the jar, but it came out great. I used a chipotle style sauce, giving it a little bit of a kick. My only criticism is that it’s missing something crunchy. I’ll probably top it off with tortilla strips or crushed Doritos the next time that I make it.
