Description

A simple, delicious version of a classic Italian dish. Ready in just under an hour, this is a perfect for busy weeknights!

Ingredients

  • ⅓ cups Olive Oil
  • 4 whole Boneless Chicken Breasts
  • ½ cups Bread Crumbs
  • ⅓ cups Flour
  • 2 Tablespoons Dried Oregano
  • 2 Tablespoons Dried Basil
  • 1 teaspoon Black Pepper
  • ½ teaspoons Sea Salt
  • 1 Tablespoon Garlic Powder
  • 2 cups Marinara Sauce
  • ⅓ cups Dry Red Wine
  • ¾ cups Mozzarella Cheese, Shredded

Preparation

Heat oven to 400ºF. Drizzle olive oil in 9 x 13 baking dish. Set aside.

Rinse chicken breasts under cold water and dry with paper towels. Set aside.

In a large bowl, combine bread crumbs, flour, oregano, basil, pepper, salt and garlic powder. Mix well. Bread chicken breasts in flour mixture and arrange in olive-oil-coated baking dish. Bake at 400ºF for 20 to 25 minutes or until browned. Remove from oven.

Top with marinara sauce, red wine and cheese. Cover and continue baking for 20 minutes. Remove cover and bake an additional 10 minutes.

Serve with pasta and tossed green salad.

Note: Recipe can be doubled.
