Once you do the prep, you just pop it into the oven and leave it alone. And in an hour, you have a perfect, homemade, healthy dinner. I simply baked potatoes in the oven while it was cooking and then it was done!
This is comfort food at its finest, with loads of vegetables cooked to perfection (crispy potatoes, soft and mellow onions and peppers, and sweet roasted garlic). From start to finish you’re under and hour, and each serving is only 420 calories. You just can’t beat it!
