Description

This easy recipe for Instant Pot BBQ Pulled Pork uses pork shoulder or pork butt roast to make the best slow cooker pork sandwich.

Ingredients

  • 1-½ Tablespoon Brown Sugar
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • ½ teaspoons Ground Mustard
  • ½ teaspoons Onion Powder
  • ½ teaspoons Paprika
  • ¼ teaspoons Cayenne Pepper
  • ¼ teaspoons Garlic Powder
  • 2 pounds Boneless Pork Butt Roast
  • 1 Tablespoon Olive Oil
  • ¾ cups Chicken Broth
  • ½ Tablespoons Worcestershire Sauce
  • ½ teaspoons Liquid Smoke
  • ½ cups BBQ Sauce

Preparation

In a small bowl combine; brown sugar, salt, pepper, ground mustard, onion powder, paprika, cayenne pepper, and garlic powder.

Cut pork roast into 3-4 even chunks.

Coat pork with dry rub and then put into a resealable container or bag. Refrigerate for a couple hours or overnight.

When ready to cook, turn on the Instant Pot saute function. Heat olive oil in Instant Pot bowl and then sear pork, turning until all sides are browned.

Remove pork to a plate, pour in chicken broth and using a spoon scrape the bottom of the bowl to release any stuck on bits of food. Cancel Saute function.

Stir in Worcestershire sauce and liquid smoke. Then add in seared pork.

Secure Instant Pot lid and turn the valve to sealing. Turn on Manual mode and cook for 30 minutes.

Once cooked, let pressure release naturally for 15-20 minutes.

Remove pork from Instant Pot and shred with 2 forks. Stir in your favorite BBQ sauce and/or use the cooking juices.

Serve on buns.
