Crisp buttery lettuce leaves topped with your favorite tomato, crisp pancetta and homemade blue cheese dressing.
Pan fry pancetta over medium heat until crisp. Crumble up pancetta. Slice tomatoes. Place several leaves of lettuce on luncheon plates. Mix remaining ingredients together well, mashing blue cheese into the dressing slightly to release flavor. Use the last 1/4 cup of milk to thin dressing to preference. Spoon dressing over leaves. Scatter tomatoes and pancetta crumbles over dressing. Enjoy!
