Description

Easy to make and big on flavor, this salad is a favorite.

Ingredients

  • 1 pound Orzo Pasta
  • 1 cup Tomatoes, Cubed
  • 1 whole Cucumber, Cubed
  • ½ whole Medium Red Onion, Finely Diced
  • 1 can (4 Oz. Can) Black Olives Sliced
  • 6 ounces, weight Jar Marinated Artichokes (artichokes Canned In Water May Be Substituted)
  • 8 ounces, weight Feta Cheese, Crumbled Or Cubed
  • 1 Tablespoon Fresh Dill, Chopped
  • _____
  • FOR THE DRESSING:
  • 1 cup Extra Virgin Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 1 whole Lemon, Juiced
  • 1 teaspoon Garlic, Finely Minced

Preparation

Cook pasta according to package instructions. (Do not overcook.) Drain. Whisk together the dressing ingredients until emulsified. Pour dressing over pasta while it is still slightly warm. Place in the refrigerator while you prep the rest of the ingredients. Toss all the ingredients into the pasta and chill before serving.

This was wonderful! I only had tomatoes, onions, and cucumbers. Loaded it with feta. Tasted good warm also, as I couldn’t wait for it to chill:)

I made this yesterday for a tailgate party for my son’s baseball game. I followed the recipe, but used a little less oil, about 1/2 cup . . . it was very good and I know I’ll be making this again. Thank you for sharing this recipe with us.

I made this last weekend for a “Greek” play potluck for my daughters class. At first I thought it was going to be way too much oil, but when it sits overnight the seasonings blend well! I added sundried tomatoes, it was great!

I loved this! I used 1/2 the box of orzo and the full amount of the other ingredients. Delicious!

I have made this several times. I am just craaazzy about this pasta salad! I could eat it all day! I love taking it to work for lunch. I make it on Sunday and it will do my husband and I both during the week for lunch. YUMMY!

I made this dish for company this weekend, and all of the adults loved it. (The kids, of course wouldn’t touch it – but that’s about what I expected.)

Note, however, that as written, this recipe makes enough for a small army. Next time, I’ll half the recipe.

This is one of my favorite summer dishes! It’s great for a large gathering, and also for a quick, cool lunch on a hot day.
