This is a cool and creamy cucumber pasta salad with the perfect blend of sweet and tangy flavors. Perfect with barbecue!
Cook and drain pasta. Mix together slaw dressing, sugar and vinegar until sugar is dissolved. Pour over pasta, add cucumber, scallions and salt and pepper to taste. Mix well and refrigerate until well-chilled.

I made this for the back to school luncheon we provided for the teachers & staff at my kids’ school yesterday! It was super easy to make and DELICIOUS!
I added an addt’l half cucumber & a little red onion for more color. I also used less sugar but, I am sure it depends on the slaw dressing you start with. I also didn’t use all the dressing – probably 12 oz. or so but, again – I just adjusted slightly to my taste.
This is definitely a keeper! Thanks for sharing an original twist to a summertime staple!

SUCH a great recipe! Perfect for summer!! Obviously cucumbers can get a little boring, and this is a lot more interesting than simply chucking them into a ranch dip. Also, bowtie is a great pasta to use in this recipe!
FYI: For the “slaw dressing” I deducted the white sugar and cider vinegar from the above recipe and mixed the following ingredients into a bowl to add to the cukes and pasta:
1 c mayonnaise
TB sugar
TB honey
1/4 c cider vinegar
salt & pepper to taste
1/4 tsp cumin
1/4 tsp paprika
1/2 – 1 TB Old Bay seasoning (depending on how zesty you like it!)
