Ingredients

  • 1 cup Cooked Lentils
  • 1 whole Chopped Roma Tomato
  • 1 Tablespoon Crumbled Low-Fat Feta Cheese
  • ½ cups Large Cut Croutons
  • 2 Tablespoons Non-Fat Tzatziki (Cucumber Yogurt Sauce)
  • 1 cup Fresh Pea Shoots
  • _____
  • FOR THE TZATZIKI SAUCE:
  • 4 cups Non-Fat Greek Yogurt
  • 1 whole Shredded Cucumber, Skin On
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Dill (Fresh Or Dried)

Preparation

Prepare lentils 1 day prior and refrigerate. (Note: Trader Joe’s makes an already cooked version that is very convenient and delicious.)

Prepare the tzatziki 1 day prior and refrigerate. To make the tzatziki, simply combine all the ingredients well.

Layer in a bowl and enjoy!
