Description

A great way to use fresh garden/market veggies and herbs. You can sub out other veggies too. Use what you have for a fresh healthy salad.

Ingredients

  • 1-½ cup Wheat Berries
  • 7 cups Water
  • 1 Tablespoon Salt
  • 6 ounces, weight Feta Crumbles
  • 2 whole Tomatoes, Chopped
  • ½ cups Greek Olives, Pitted And Sliced
  • 1-½ cup Cucumber, Chopped
  • 5 whole Radishes, Thinly Sliced
  • 2 Tablespoons Fresh Or Dried Mint (use Less If Dried)
  • 2 Tablespoons Fresh Or Dried Basil (use Less If Dried)
  • 2 Tablespoons Fresh Parsley (Use Less If Dried)
  • 1 can White Fava Beans, Rinsed
  • 1 whole Lemon, Juice From One Lemon
  • ⅓ cups Vinaigrette Or Italian Dressing (oil Based)
  • 3 whole Green Onions, diced
  • 1 dash Salt, Pepper And Cayenne To Taste

Preparation

Cook wheat berries for one hour, in salted water. Drain and rinse to cool.

Meanwhile, prepare all other ingredients except salt, pepper and cayenne.

Mix all ingredients when wheat berries are done, except salt, pepper and cayenne – add this at the end to taste.

Serve or cool till serving.
