A tasty and healthy salad that adds freshness and tang to the hearty wheat berries.
Bring the water to a boil in a pot. Add the wheat berries, cover and lower the heat. Cook on low flame for approximately 1 hour or until the wheat berries are tender and the water has been absorbed. Let cool and add the tomatoes and fresh herbs. Whisk together the dressing ingredients and add to the wheat berries. Toss in the crumbled cheese and serve at room temperature.
