A great salad that is fresh and light. The flavors combine wonderfully for a healthy dish.
Combine melon and cucumbers in a mixing bowl and toss gently. Squeeze lemon juice over melon and cukes.
Roll mint leaves and chiffonade (cut into thin strips). Mix into salad. Refrigerate for at least 30 minutes.
Serve onto small plates and top with feta cheese. Garnish with mint leaves.
