The only thing cooked here is the pasta, and it’s so good.
In large pot of boiling salted water, cook pasta shells until al dente, according to package instructions, drain.
In large bowl, toss warm pasta with diced tomatoes, (I have used Roma and other types of tomatoes, it’s all good), diced mozzarella, red onion, oil, garlic and parsley. Season with salt and pepper. Serve.
I have added more things and also made it with less in the salad, still a great salad. The mozzarella gets melty and stringy, makes my skirt fly up.
