Description

The only thing cooked here is the pasta, and it’s so good.

Ingredients

  • 1 Pound Of Pasta Shells
  • 5 Cups Diced Tomatoes
  • 2 Cups Mozzarella Cheese (3/4 Lb.)
  • 1 Halved And Thinly Sliced Small Red Onion
  • 1/4 Cup Olive Oil Or Less
  • 2 Minced Garlic Clove
  • 1/4 Cup Flat Leaf Parsley (optional)
  • Salt And Pepper, to taste

Preparation

In large pot of boiling salted water, cook pasta shells until al dente, according to package instructions, drain.

In large bowl, toss warm pasta with diced tomatoes, (I have used Roma and other types of tomatoes, it’s all good), diced mozzarella, red onion, oil, garlic and parsley. Season with salt and pepper. Serve.

I have added more things and also made it with less in the salad, still a great salad. The mozzarella gets melty and stringy, makes my skirt fly up.

Delicious and easy!! I used regular prepackaged 8oz mozzarella cheese & grated it. I took this to a pot luck with friends & they all requested the recipe! No leftovers left!
