Are you craving a delicious but also very healthy meal? This Vegan Lentil Mixed Green Salad is a great option for dinner, or to serve as a side dish.
Mix dressing ingredients until combined. Season to taste.
Slice cucumber and tomato into bite-size pieces. Add to a bowl along with cooked lentils (see note below), mixed greens, and chickpeas. Pour dressing on top. Toss everything until combined.
Note: To cook lentils, in a medium-size pot, add 3 cups of water and 1 cup of lentils. Bring to boil, then reduce heat and cook for about 15–20 minutes until tender. Let cool.
