Description

A copycat of my favorite salad from Houlihan’s in Elkridge, Maryland. It is lighter on the lettuce and heavy on the tomatoes and beans.

Ingredients

  • FOR THE SALAD:
  • 2 cups Mixed Greens
  • 2 whole Medium Tomatoes, Diced
  • ½ whole Red Onion, Diced
  • 1 cup Cannellini Beans, Rinsed And Drained
  • ¼ cups Feta Or Goat Cheese
  • _____
  • FOR THE CROUTONS:
  • ½ cups Day Old Bread (cubed)
  • Olive Oil, To Drizzle
  • Poultry Seasoning, To Taste
  • _____
  • FOR THE DRESSING:
  • 2 cloves Garlic, Minced
  • ¼ cups Balsamic Vinegar
  • ½ cups Olive Oil
  • ¼ teaspoons Salt
  • Pinch Sugar
  • 1 sprig Fresh Rosemary Leaves, Minced

Preparation

Toss all the salad ingredients together in a bowl.

To make the croutons, lay the bread flat on a baking sheet. Drizzle with olive oil and poultry seasoning. Cook in a 400ºF oven until the bread is golden brown, about 7 minutes. Let cool slightly and add to the salad.

To make the dressing, whisk all the dressing ingredients together in a bowl. Test with a piece of lettuce and adjust seasonings as you desire. Drizzle over salad and toss.

My favorite Tuscan Salad recipe that is so similar to Houlihans. Loved it. I serve mine with goat cheese mixed with cream cheese and then spread it on the crostini and top with the bean, tomato mixture. Perfect dinner on a hot night and you don’t feel like cooking. Thanks for sharing.
