Healthful and yummy—it’s lunch in an avocado.
For the salad:
In a medium sized bowl mix together all ingredients from tuna through pepper.
Evenly scoop the tuna mixture into each of the avocado halves. Spoon ginger soy dressing over the halves or you can initially combine it with the tuna mixture.
For the dressing:
Add all of the dressing ingredients into a medium sized lidded jar. Put the lid on tightly and shake all ingredients until slightly emulsified.

Love the avocado “bowl.” This would make a yummy dinner on a hot night.
