Crispy corn chips layered in shredded lettuce, tossed with spicy chipotle ranch dressing, pico de gallo, black beans, corn and avocado.
1. Wash and chop Romaine lettuce and place in a bowl.
2. Add dressing to the lettuce and mix well.
3. Add corn, pico de gallo and beans to the lettuce mixture and toss.
To plate, place half of the lettuce/corn/bean mixture on a salad plate. Layer the corn chips, then the rest of the lettuce mix. Lay the sliced avocado, meat and sprinkle with Monterey Jack cheese.
Serve immediately.
