This was served at my daughter’s wedding in 2000. When co-workers that missed the wedding asked about the wedding, this is what people talked about! Not how the bride looked. They went on and on about the salad and the food!
1. Cook tortellini according to package directions. Drain and rinse with cold water.
2. In a large clear bowl with straight sides or a 9×13 pan (I use this), layer cole slaw mix, spinach, tortellini, tomatoes, onion.
3. Pour dressing over top, sprinkle with bacon. Cover.
4. Refrigerate until serving time. I like it better if it sits overnight in the refrigerator, allowing the ingredients to sit in the dark cozy confines of your fridge to get better acquainted. They’ll love you for it in the morning. The flavors will meld and the salad will be better for it. Trust me.
