We love this salad all year round, but I especially love it in the summer. No heating up the kitchen! I make it a main dish meal by adding cooked chicken. YUM!
Cook tortellini according to package directions. Drain; rinse with cold water. Set tortellini aside.
For the dressing, in a small bowl, whisk together mayonnaise, milk, 1/4 Cup of Parmesan, lemon juice, garlic and pepper.
Place the drained tortellini in a large salad bowl. Add the romaine lettuce.
Just before serving, drizzle with dressing; toss to coat.
Top with croutons, more freshly grated Parmesan and tomatoes, if desired. Makes 10 servings.
*You can mix different kinds of lettuce if you choose. I usually serve the dressing on the side when we have it here at home so that we can enjoy the salad for a few days without it getting soggy.
Note: This salad is wonderful with sliced or cubed chicken in it (rotisserie chicken from the grocery store is wonderful to add to this). Makes a great main dish salad or a wonderful lunch!

I made this for Thanksgiving yesterday and it was a complete hit! Kids and adults loved it. I can’t wait to make it again. Thanks for sharing this recipe!

I decided to try this salad rather than a traditional Caesar, and it was a great choice. I took it to our supper club, and it got rave reviews.
