Description

This Thai cucumber salad is so easy to prepare and simply delicious!

Ingredients

  • 1  Cucumber, Peeled In Stripes
  • ¼  Onion, Sliced Thinly
  • 1  Green Onion, Sliced On The Bias
  • 6  Cherry Tomatoes, Cut In Half Or Thirds
  • FOR THE DRESSING:
  • 2 teaspoons Sugar
  • 2 Tablespoons Thai Fish Sauce
  • 2 Tablespoons Rice Wine Vinegar

Preparation

Add all vegetables to a bowl.

In a separate bowl, mix the sugar, fish sauce, and rice wine vinegar. Add to the vegetables and mix well.

Taste! You should be able to taste a mixture of sweet (sugar), salty (fish sauce), and sour (vinegar).

Eat immediately or better yet, allow the flavors to infuse the vegetables for a couple of hours in the fridge. My preference is letting it marinate for several hours as I think it tastes better that way.

SOOOO good! I made this as a side dish to Korean Sloppy Joes (Foodnetwork.com) and it was perfect. The leftover salad was even better the next day. Make this!
