Description

Don’t let the amount of sugar in this fool you. It has a delicious taste.

Ingredients

  • 6 whole Large Potatoes
  • 2 whole Hard Boiled Eggs
  • 8 strips Fried Bacon, Chopped
  • 1 cup Hellman's Mayonnaise
  • 1 cup Kraft Miracle Whip
  • 1 teaspoon Mustard, For Coloring
  • 1-½ teaspoon Vinegar
  • ⅔ cups Sugar -- Slightly Less

Preparation

Boil the potatoes until cooked through, then cool and peel skin. Cut into small cubes. Boil eggs and cut into small pieces and then set aside. Cook bacon in a pan and then cut into small pieces. Set aside.

The salad dressing is the key to making this recipe taste good. Combine the Hellman’s mayonnaise and Miracle Whip salad dressing. Then add mustard mostly for a light off-white coloring. Add the vinegar. Add sugar, but use a little less than 2/3 of a cup. Taste salad dressing and if it is too sweet, add just a little more vinegar. If it is too tart, add a little more sugar. This dressing requires a lot of sugar and the right taste is sweet and a little tart at the same time.

Add the bacon bits and chopped hard boiled eggs to the salad dressing. Pour the dressing into the potatoes and mix well.

I knew your salad recipe included Miracle Whip!

I’m new to the south from California. I’ve always hated MW but am beginning to like it in tater salad and other recipes. My neighbor makes the BEST salad – similar to your recipe – the magic ingredient? Mircale Whip.
