Sweet and tangy salad, perfect for summertime.
Combine cucumbers, onions, vinegar and sugar in a bowl. These can sit for a while in the refrigerator before you need them. Before serving, add watermelon, red pepper flakes, and mint to the mixture. Toss gently.
Please note that the watermelon will take on the flavors quickly. You don’t want to add the pepper flakes or onion too soon.

Oh my goodness, this sounds so good. I’m adding this to my recipe box and trying it as soon as possible. Actually, all I need is the watermelon.
