Description

This melon salad with mint is refreshing on a hot summer’s day.

Ingredients

  • ½ cups Water
  • 1 cup Sugar
  • 3-½ cups (approximately) Watermelon Balls
  • 3-½ cups (approximately) Cantaloupe Balls
  • ½ cups Mint Leaves, Packed
  • ¼ cups Lemon Juice
  • 1 teaspoon Amaretto

Preparation

Begin by making the simple syrup. Combine the sugar and water in a saucepan over medium heat. Bring to a low simmer and stir, making sure that all sugar is dissolved. It should only take a couple of minutes of simmering. The liquid will thicken slightly and should remain clear. Remove from heat and let cool. (Note: You are only using a portion of this syrup. Refrigerate the remainder for a few days if you’d like, for use in another recipe. It’s great for sweetening tea or water.)

Next, using a melon baller, scoop about 3 1/2 cups of watermelon and 3 1/2 cups cantaloupe into a large mixing bowl and set aside. If you don’t have a melon baller you can always cut up the melon into about 1-1 1/2″ squares.

Once the simple syrup has cooled, blend 1/4 cup of the simple syrup, mint, lemon juice and amaretto in a blender until mint is finely chopped.

Pour the mixture over the melon pieces and combine well.

Serve right away, or cover and refrigerate until ready to serve.

Mint is truly the greatest weed on the planet, isn’t it. I made something sort of similar with browned halloumi cheese and green beans (I know that sounds weird) that was really delicious.

Amy that looks so pretty and so yummy all rolled in one. Have you ever added honey dew melon along with the watermelon and the canteloupe. The green would be pretty as well.

I liked this a lot. It was pretty and quite tasty. I will definitely be making this again. My only complaint is that the amaretto gets lost. So, I would leave it out or add a lot more, depending on what kind of event I’m making this for!

It’s been 100 degrees or near that for over a week. We needed REFRESHING!

This is a great salad! Quick and easy to make and ingredients that I almost always have on hand.

Next time I would use less lemon juice. Maybe mine was an extra strong lemon but that is the dominant taste in the recipe.

Definitely worth making again, I’d just use less lemon juice.
