Description

A wonderful summer salad. Nice tangy dressing that complements the tender spinach and fresh berries.

Ingredients

  • ¾ cups Low Fat Miracle Whip Dressing
  • ¼ cups 1% Milk
  • ¼ cups Sugar
  • 3 Tablespoons White Wine Vinegar
  • ½ Tablespoons Dry Mustard
  • 3 Tablespoons Poppy Seeds
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 4 cups Baby Spinach Leaves
  • ¼ cups Thinly Sliced Red Onion
  • ½ cups Fresh Raspberries
  • ¼ cups Sliced Almonds
  • ¼ cups Thinly Sliced Red/yellow Pepper

Preparation

Mix the Miracle Whip, milk, sugar, white wine vinegar, dry mustard, poppy seeds, salt and pepper in a jar with a tight-fitting lid and shake well to combine.

In a large bowl toss together the spinach, onion, raspberries, almonds and peppers. Drizzle the dressing over the salad.

Enjoy!

You could use strawberries or blueberries in place of the raspberries. Also you could use pecans or walnuts for the almonds if you like.

Loved the dressing. I did have to thin it a bit with more milk but I loved the taste.
