One recipe, four slaws: Salsa Verde (pictured), Soy-Ginger, Classic American and Orange Cumin.
Whisk salsa, lime juice and vinegar together in a 2-cup Pyrex measuring cup. Slowly whisk in olive oil.
Mix coleslaw mix, onions or scallions, peppers, carrot and cilantro in a large bowl. Add dressing and a generous sprinkling of salt and pepper. Toss, let stand a few minutes for flavors to bend, if there’s time, and serve.
