Description

One recipe, four slaws: Salsa Verde (pictured), Soy-Ginger, Classic American and Orange Cumin.

Ingredients

  • ¾ cups Jarred Salsa Verde
  • ¼ cups Juice From 2 Limes
  • ¼ cups Rice Wine Vinegar
  • ¼ cups Olive Oil
  • 4 cups (about 12 Ounces) Coleslaw Mix
  • ¼ whole Sweet White Onion Or 4 Medium Scallions, Sliced Thin
  • ½ whole Medium Red Or Yellow Bell Pepper (or 1/4 Each)
  • 1 whole Medium Carrot, Coarsely Grated
  • ¼ cups Chopped Fresh Cilantro
  • 1 pinch Salt And Freshly Ground Black Pepper

Preparation

Whisk salsa, lime juice and vinegar together in a 2-cup Pyrex measuring cup. Slowly whisk in olive oil.

Mix coleslaw mix, onions or scallions, peppers, carrot and cilantro in a large bowl. Add dressing and a generous sprinkling of salt and pepper. Toss, let stand a few minutes for flavors to bend, if there’s time, and serve.

I picked over 8 lbs. of tomatillos yesterday and planned to can a bunch of salsa verde today. I found this recipe this evening — we love coleslaw and this was a perfect combination!! Thank you :) **a little sidenote — I told my daughter this recipe came from the lady that wrote the cookbook “one dish dinners….” and she said “ThreeManyCooks” – I was amazed she put it all together!!! You have a knack for putting the right ingredients together.
