My family has been making this salad for decades and it is still requested at every family, work and church function we go to. Try it. You will LOVE it!
Chop green pepper into bite-size pieces. Blend vinegar, oil, sugar, green pepper, poppy seeds and mustard in a blender. Slice red onion and mushrooms. Pour vinegar blend over onions and mushrooms and let marinate overnight in the fridge. Toss spinach, lettuce, grated cheese and crumbled bacon. Add dressing just before serving.
