Salad with blueberries, almonds and goat cheese.
Start by roasting the almonds in a dry skillet over medium-low to medium heat until they start to smell nutty. Remove from heat. Chop them once they are cool enough to handle.
Build up your salad by tossing together the spinach, chopped almonds, blueberries and goat cheese then drizzle with vanilla oil just before serving.
Enjoy with a nice piece of home baked bread.
